Ingredients

  • 2 cups sifted flour
  • 2 teaspoons baking powder
  • 1 12 teaspoons baking soda
  • 1 12 teaspoons salt
  • 2 teaspoons ground cinnamon
  • 2 cups granulated sugar
  • 1 12 cups vegetable oil
  • 4 eggs
  • 2 cups finely shredded raw carrots
  • 1 (8 ounce) can crushed pineapple, drained
  • 12 cup chopped walnuts
  • 1 (3 1/2 ounce) can flaked coconut

Method

  • Combine and sift together flour, baking powder, soda, salt and cinnamon.
  • Add sugar, oil and eggs.
  • Using electric mixer, beat at medium speed 1 minute.
  • Stir in carrots, pineapple, nuts and coconut.
  • Pour batter into 3 greased and floured 9-inch cake pans or in a 13x9-inch pan and bake in a 350 oven for 35-40 minutes or until a toothpick comes out clean.
  • Let cool completely before filling and icing.
