- 2 cups sifted flour
- 2 teaspoons baking powder
- 1 12 teaspoons baking soda
- 1 12 teaspoons salt
- 2 teaspoons ground cinnamon
- 2 cups granulated sugar
- 1 12 cups vegetable oil
- 4 eggs
- 2 cups finely shredded raw carrots
- 1 (8 ounce) can crushed pineapple, drained
- 12 cup chopped walnuts
- 1 (3 1/2 ounce) can flaked coconut
Method
- Combine and sift together flour, baking powder, soda, salt and cinnamon.
- Add sugar, oil and eggs.
- Using electric mixer, beat at medium speed 1 minute.
- Stir in carrots, pineapple, nuts and coconut.
- Pour batter into 3 greased and floured 9-inch cake pans or in a 13x9-inch pan and bake in a 350 oven for 35-40 minutes or until a toothpick comes out clean.
- Let cool completely before filling and icing.
