Ingredients

  • 6 croaker or other white fish fillets, microwaved 5 minutes
  • 1 lg vidalia or sweet onion, chopped
  • 1 jalapeno pepper, chopped
  • 1 egg, beaten
  • 1/4 c horseradish sauce (Woeber's Sandwich Sauce)
  • 1/2 Tbsp Old Bay
  • Kosher salt to taste
  • Bread crumbs (Italian)
  • Flour
  • Butter

Method

  • Mix first 7 ingredients and form into patties. Add bread crumbs as necessary to firm up. Roll patties in flour.
  • Heat butter in frying pan until hot. Saute patties 2 to 3 minutes per side, until nicely browned.
  • Serve with tartar or cocktail sauce. Try some freshly squeezed lemon juice or minced parsley.
