Ingredients
- 2 c. water
- 2 c. sugar
- pinch of salt
- 1 c. lemon juice
- grated rind of 1 lemon
- 2 egg whites
Method
- Mix together water, sugar and salt in a saucepan.
- Bring to a boil and cook over medium heat for 5 minutes.
- Add the lemon juice and rind to sugar mixture; let cool.
- Beat the egg whites until stiff and fold into the cooled lemon mixture.
- Pour into freezer trays, cover with plastic wrap and freeze until firm.
- Stir occasionally.
