Ingredients
- 1 1/2 c. flour
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1/2 tsp. each: salt, nutmeg and cinnamon
- 1 pkg. coconut pie filing
- 1/4 c. sugar
- 2 eggs
- 2 Tbsp. oil
- 1/4 c. skim milk
- 1 c. pumpkin
Method
- Mix dry ingredients.
- Mix remaining ingredients; add to dry mixture.
- Stir well.
- Bake at 350° in loaf pan for 45 minutes. Preheat oven.
- Flour and grease pan.
- Makes 12 servings at 138 calories per serving.
