Ingredients

  • 2 to 3 cloves garlic, smashed
  • 3 to 4 anchovies, smashed
  • 1/2 tsp. Worcestershire
  • 1 Tbsp. Dijon mustard
  • 1 coddled egg
  • 5 oz. virgin olive oil
  • 2 1/2 oz. tarragon vinegar
  • 2 heads leaf lettuce
  • 1 c. fresh grated Parmesan cheese
  • 1/2 medium-sized lemon
  • 1 1/2 c. garlic croutons

Method

  • You may adjust garlic and anchovies to taste.
  • Smash garlic and anchovies into a paste, then add remaining ingredients, except lettuce, cheese and croutons.
  • Toss with lettuce and top with cheese and croutons.
