Ingredients

  • 2 pounds sweet potatoes, or yams peeled, cut up
  • 3 1/2 pounds chicken, whole cubed
  • 1 cup soy sauce, tamari
  • 1/4 cup sherry dry
  • 3 tablespoons brown sugar
  • 1 teaspoon ginger ground
  • 4 each garlic cloves crushed
  • 2 each scallions, spring or green onions finely diced

Method

  • Thoroughly combine soy sauce, sherry, brown sugar, and ginger.
  • Pour over 20 potatoes and chicken in baking dish.
  • Cover and marinate 1 hour.
  • Turn over chicken and potatoes and marinate additional hour.
  • Preheat oven to 325F (160C).
  • Bake 25 minutes.
  • Turn over potatoes and chicken; baste.
  • Bake 30 minutes more.
