Ingredients

  • 1/2 c. cocoa
  • 2 c. sugar
  • 1/8 tsp. cream of tartar
  • 2/3 c. milk
  • 2 Tbsp. butter
  • 1 tsp. vanilla

Method

  • Place cocoa, sugar, cream of tartar and milk in saucepan; mix well.
  • Place over heat and cook, stirring constantly, until sugar dissolves.
  • Cover and cook 2 minutes longer.
  • Uncover and cook until mixture forms a soft ball when dropped from spoon into cold water.
  • Remove from heat.
  • Add butter, but do not stir.
  • Cool to lukewarm.
  • Add vanilla and beat until creamy or until shine disappears.
  • Pour onto greased pan.
  • Cut when cool and serve.
