Ingredients

  • 2 cups diced tomatoes
  • 13 cup onion
  • 1 jalapeno pepper
  • 2 teaspoons cilantro
  • 1 small garlic clove
  • 1 tablespoon lime juice
  • 14 teaspoon salt

Method

  • Prepare vegetables: Remove skin from tomatoes by dipping them in boiling water for about 10 seconds and sliding off skins.
  • Remove seeds and chop finely.
  • Remove seeds from pepper.
  • Mince vegetables.
  • If using a food processor, prepare tomatoes separately from other vegetables, using the pulse function.
  • Mix all together.
  • Let stand 1/2 hour before serving.
  • Store in the refrigerator for up to a week.
