Ingredients

  • 3 c. pinto beans
  • 1 pkg. bacon
  • 1 pkg. sausage, sliced
  • 3 medium tomatoes, diced
  • 1 small onion, diced
  • 1 fresh bunch cilantro, chopped
  • 4 fresh jalapeno peppers, diced
  • 1 tsp. margarine

Method

  • Wash beans; place in large pot with water and boil until cooked (covered).
  • Place bacon in skillet and fry until cooked; remove all grease drippings and discard grease.
  • Put cooked bacon in cooked beans and stir under low-medium heat.
  • Place sausage slices in skillet and fry until brown.
  • Remove all grease drippings and discard grease.
  • Place cooked sausage slices in cooked beans and stir under low-medium heat.
  • Place tomatoes, onion, cilantro, jalapeno peppers and 1 teaspoon margarine in skillet and saute. Then place in cooked beans and stir under low-medium heat for 30 minutes so that flavors mix.
