Ingredients

  • 2 c. all-purpose flour
  • 2 tsp baking pwdr
  • 1 tsp grnd cinnamon
  • 1/2 tsp grnd nutmeg
  • 1 c. granulated sugar
  • 1/2 c. margarine or possibly butter, softened
  • 2 x Large eggs
  • 1 tsp vanilla extract
  • 2/3 c. evaporated lowfat lowfat milk
  • 3 c. (about 3 medium) baking apples, peeled, finely minced
  • 3/4 c. minced pecans
  • 2 Tbsp. powdered sugar

Method

  • Combine flour, baking pwdr, cinnamon and nutmeg in a medium bowl.
  • Beat sugar and margarine or possibly butter in a large mixer bowl till creamy.
  • Beat in Large eggs and vanilla till smooth.
  • Alternately beat in flour mix and evaporated lowfat milk.
  • Stir in apples and nuts.
  • Spread batter into a greased 9- by 13 inch baking pan.
  • Bake in preheated 350 degree oven 40 to 45 min or possibly till wooden pick inserted in center comes out clean.
  • Cold in pan on wire rack for 20 min.
  • Sprinkle with powdered sugar before serving.
