Ingredients

  • 1 cup plain yogurt
  • 3 cloves garlic minced
  • 1 lemon
  • 1 cup panko breadcrumbs
  • 2 tablespoons grated Parmesan
  • 4 chicken drumsticks large, skin removed
  • 1 pound potatoes peeled, cut into fries
  • 1 pound sweet potatoes peeled, cut into fries
  • lemon wedges to serve
  • cooking spray

Method

  • Preheat the oven to 400°F. Line 2 baking sheets with parchment. In a large, shallow bowl, combine yogurt, garlic, and lemon juice and zest. Spread combined breadcrumbs and Parmesan on a plate. Season to taste.
  • Dip drumsticks in yogurt mixture and roll in breadcrumbs. Place on tray. Chill, covered, for at least 30 mins.
  • Arrange potatoes and sweet potatoes in a single layer on remaining baking sheet. Spray with oil and season to taste.
  • Spray chicken with oil. Bake both trays for 45-50 mins, until chicken juices run clear when thickest part is pierced with a skewer. Serve chicken with fries and lemon wedges.
