Ingredients

  • 2 Tbsp. peanut oil
  • 1/2 tsp. salt
  • 2 eggs
  • 1/3 c. chopped onions
  • 1/3 c. chopped green onions
  • 1 c. fresh bean sprouts
  • 1 Tbsp. chicken stock
  • 3 Tbsp. soy sauce
  • 3 c. cooked rice
  • pepper to taste

Method

  • Heat oil in wok or large skillet over high heat. Add salt. Break eggs into wok and scramble quickly until egg is cooked and in small particles. Add onions and green onions and stir-fry for 2 minutes.
  • Add bean sprouts and stir-fry for 1 minute. Add remaining ingredients and stir-fry until thoroughly hot. Serve with any Oriental entre or add chicken, pork or beef (already cooked) as you choose for a complete meal.
