Ingredients

  • 5 medium yellow onions
  • 5 Tbsp. butter
  • 2 Tbsp. oil
  • 2 tsp. sugar
  • 6 c. beef consomme
  • 3 c. chicken broth
  • 2 c. burgundy wine
  • 1 c. white wine
  • 3 c. water
  • 2 Tbsp. beef base
  • few dashes brandy
  • garlic powder and pepper to taste
  • 2 Tbsp. dry parsley, Parmesan cheese, garlic and cheese croutons

Method

  • Saute onions in butter and oil in a large pot.
  • Cook over medium heat until onions are soft.
  • Sprinkle onions with sugar and toss together.
  • Add stocks and wine, water and beef base.
  • Stir well and bring to boil.
  • Add brandy, parsley flakes, garlic powder and pepper to taste.
