- 5 medium yellow onions
- 5 Tbsp. butter
- 2 Tbsp. oil
- 2 tsp. sugar
- 6 c. beef consomme
- 3 c. chicken broth
- 2 c. burgundy wine
- 1 c. white wine
- 3 c. water
- 2 Tbsp. beef base
- few dashes brandy
- garlic powder and pepper to taste
- 2 Tbsp. dry parsley, Parmesan cheese, garlic and cheese croutons
Method
- Saute onions in butter and oil in a large pot.
- Cook over medium heat until onions are soft.
- Sprinkle onions with sugar and toss together.
- Add stocks and wine, water and beef base.
- Stir well and bring to boil.
- Add brandy, parsley flakes, garlic powder and pepper to taste.
