Ingredients
- 1/4 c. butter
- 1/2 tsp. salt
- 1/2 tsp. dill weed
- 1/2 tsp. pepper
- 2 tsp. lemon juice
- 2 medium carrots, cut in 1/2-inch slices
- 1 small onion, cut into rings
- 1 medium tomato, cut into 1-inch pieces
- 1/2 lb. white fish fillets
Method
- In 10-inch skillet, melt butter.
- Stir in salt, dill, pepper and lemon juice.
- Add carrots, potatoes and onion.
- Cover and cook over medium-low heat.
- Stir occasionally, until vegetables are crisp-tender (9 to 12 minutes).
- Add fish.
- Cover and cook 5 minutes.
- Add tomato until heated through and fish flakes.
