Ingredients

  • 1/4 c. butter
  • 1/2 tsp. salt
  • 1/2 tsp. dill weed
  • 1/2 tsp. pepper
  • 2 tsp. lemon juice
  • 2 medium carrots, cut in 1/2-inch slices
  • 1 small onion, cut into rings
  • 1 medium tomato, cut into 1-inch pieces
  • 1/2 lb. white fish fillets

Method

  • In 10-inch skillet, melt butter.
  • Stir in salt, dill, pepper and lemon juice.
  • Add carrots, potatoes and onion.
  • Cover and cook over medium-low heat.
  • Stir occasionally, until vegetables are crisp-tender (9 to 12 minutes).
  • Add fish.
  • Cover and cook 5 minutes.
  • Add tomato until heated through and fish flakes.
