Ingredients
- 3 c. scalded milk
- 6 Tbsp. honey
- 1 Tbsp. salt
- 6 Tbsp. butter
- 1 c. cold water
- 2 pkg. dry yeast
- 12 c. flour
Method
- Scald milk. Add honey, salt and butter.
- Add cold water to cool mixture. When lukewarm, add yeast. Stir to dissolve.
- Add about 4 cups of flour. Stir with wire whisk until smooth. Gradually add 7 more cups of flour, mixing well. Turn out onto floured board with final 1 cup of flour and knead 10 minutes, using minimal extra flour.
- Let rise in a greased bowl, covered, until doubled in size (about 1 hour).
- Punch down. Shape into loaves.
- Place in greased bread pans.
- Let rise again about 45 minutes.
- Bake at 400° for 30 minutes or until loaves sound hollow when tapped.
- Makes 4 large or 6 smaller loaves.
