Ingredients

  • 3 c. scalded milk
  • 6 Tbsp. honey
  • 1 Tbsp. salt
  • 6 Tbsp. butter
  • 1 c. cold water
  • 2 pkg. dry yeast
  • 12 c. flour

Method

  • Scald milk. Add honey, salt and butter.
  • Add cold water to cool mixture. When lukewarm, add yeast. Stir to dissolve.
  • Add about 4 cups of flour. Stir with wire whisk until smooth. Gradually add 7 more cups of flour, mixing well. Turn out onto floured board with final 1 cup of flour and knead 10 minutes, using minimal extra flour.
  • Let rise in a greased bowl, covered, until doubled in size (about 1 hour).
  • Punch down. Shape into loaves.
  • Place in greased bread pans.
  • Let rise again about 45 minutes.
  • Bake at 400° for 30 minutes or until loaves sound hollow when tapped.
  • Makes 4 large or 6 smaller loaves.
