Ingredients

  • 1 c. chopped onion
  • 1/2 c. chopped celery
  • 1 large clove garlic, crushed
  • 2 cans (16 oz.) tomatoes, cut up chunks
  • 1/2 c. dry white wine
  • 1/2 c. minced parsley
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 tsp. thyme
  • 1 pkg. (1 lb.) frozen fish fillets, thawed or partly thawed, cut in 1-inch chunks

Method

  • In large saucepan saute onion, celery and garlic in margarine or batter until tender.
  • Stir in tomatoes, wine, parsley, salt, pepper and thyme.
  • Cover.
  • Simmer for 30 minutes.
  • Add fish and simmer for 7 to 10 minutes or until fish is opaque and flakes easily with fork.
