Ingredients
- 1 c. chopped onion
- 1/2 c. chopped celery
- 1 large clove garlic, crushed
- 2 cans (16 oz.) tomatoes, cut up chunks
- 1/2 c. dry white wine
- 1/2 c. minced parsley
- 1 tsp. salt
- 1/4 tsp. pepper
- 1/2 tsp. thyme
- 1 pkg. (1 lb.) frozen fish fillets, thawed or partly thawed, cut in 1-inch chunks
Method
- In large saucepan saute onion, celery and garlic in margarine or batter until tender.
- Stir in tomatoes, wine, parsley, salt, pepper and thyme.
- Cover.
- Simmer for 30 minutes.
- Add fish and simmer for 7 to 10 minutes or until fish is opaque and flakes easily with fork.
