Ingredients

  • 6 medium tomatoes peeled and quartered
  • 1 medium onion sliced
  • 1 medium bell pepper cut in strips
  • 1 large cucumber peeled and sliced
  • 3/4 c. cider vinegar
  • 1/4 c. water
  • 1 1/2 Tbsp. sugar
  • 1 1/2 tsp. each celery and mustard seed
  • 1/2 tsp. salt
  • 1/2 tsp. red peppers
  • 1/8 tsp black pepper

Method

  • Combine all vegetables in a large bowl and set aside. Combine remaining ingredients in small saucepan and bring to a boil for 1 minute. Pour mixture over vegetables. Cover and chill for 8 hours. Makes 10 servings.
