Ingredients
- 6 medium tomatoes peeled and quartered
- 1 medium onion sliced
- 1 medium bell pepper cut in strips
- 1 large cucumber peeled and sliced
- 3/4 c. cider vinegar
- 1/4 c. water
- 1 1/2 Tbsp. sugar
- 1 1/2 tsp. each celery and mustard seed
- 1/2 tsp. salt
- 1/2 tsp. red peppers
- 1/8 tsp black pepper
Method
- Combine all vegetables in a large bowl and set aside. Combine remaining ingredients in small saucepan and bring to a boil for 1 minute. Pour mixture over vegetables. Cover and chill for 8 hours. Makes 10 servings.
