Ingredients

  • 1 large garlic clove minced
  • 1/2 pound purple sweet potatoes organic fingerling
  • 2 blue potatoes medium organic
  • 3/4 teaspoon freshly ground pepper
  • 1 sprig thyme
  • 1 teaspoon salt
  • 3/4 cup whole milk
  • 1/2 cup heavy cream

Method

  • Preheat oven to 350°F.
  • Mince garlic and place on the bottom of the skillet
  • Peel potatoes. Cut into thin slices - 1/8 inch - 1/4 inch thick.
  • Place the first layer of potato slices on bottom of baking dish, overlapping one another. Layer the rest over the top of that.
  • Pour milk and heavy cream over the potatoes
  • Sprinkle with salt, pepper and thyme.
  • Place skillet in oven and bake for about 45 minutes - 1 1/2 hours, depending on how crispy you want it. Be sure to spoon some of the milk over the potatoes every 15 minutes if necessary.
