Ingredients

  • 1/2 pound Fava Beans
  • 1 large yellow onion (diced)
  • olive oil
  • egg yolks*
  • 1 cup sour cream
  • 1/2 cup lemon juice
  • 1 sprig rosemary
  • salt and pepper to taste
  • *I recommend at least 2 egg yolks but I have made it with up to 8

Method

  • 1. Blanch the fava beans for 3 minutes, drain and set aside keep some of the cooking water in reserve
  • 2. Heat the olive oil in a pot (can be the same pot used to blanch the fava beans)
  • 3. Saute the onion 2-3 minutes in the oil
  • 4. mix the egg yolks, lemon juice, sour cream, rosemary, salt, and pepper together
  • 5. Add the fava beans to the onions and simmer 5 more minutes
  • 6. Add the egg mixture and stir to combine
  • 7. Allow to simmer until beans reach the desired consistency adding the reserved water if there is not enough moisture in the pot
