Ingredients
- 1/2 pound Fava Beans
- 1 large yellow onion (diced)
- olive oil
- egg yolks*
- 1 cup sour cream
- 1/2 cup lemon juice
- 1 sprig rosemary
- salt and pepper to taste
- *I recommend at least 2 egg yolks but I have made it with up to 8
Method
- 1. Blanch the fava beans for 3 minutes, drain and set aside keep some of the cooking water in reserve
- 2. Heat the olive oil in a pot (can be the same pot used to blanch the fava beans)
- 3. Saute the onion 2-3 minutes in the oil
- 4. mix the egg yolks, lemon juice, sour cream, rosemary, salt, and pepper together
- 5. Add the fava beans to the onions and simmer 5 more minutes
- 6. Add the egg mixture and stir to combine
- 7. Allow to simmer until beans reach the desired consistency adding the reserved water if there is not enough moisture in the pot
