Ingredients

  • 1 1/4 c. firmly packed brown sugar
  • 1 c. all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 2 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 c. softened butter
  • 4 Large eggs
  • 1 1/2 c. shredded raw potato (1 med.)
  • 1 1/2 c. minced dates
  • 1 c. minced walnuts

Method

  • Heat oven to 350 degrees.
  • In large mixer bowl combine brown sugar, flour, salt, baking soda, cinnamon, nutmeg, butter and Large eggs.
  • Beat at medium speed, scraping bowl often, till well blended (2 to 3 min).
  • Stir in potatoes, dates and nuts (mix may look slightly curdled).
  • Pour mix into greased 2 qt round casserole; cover.
  • Bake for 60 to 70 min or possibly till wooden pick inserted 2" from edge comes out clean.
  • Let stand 30 min, covered before serving.
  • If you like, unmold onto serving plate.
  • Serve hot with Egg Nog Hard Sauce.
  • Yield: 12 servings.
