Ingredients
- 1 1/4 c. firmly packed brown sugar
- 1 c. all-purpose flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 2 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1 c. softened butter
- 4 Large eggs
- 1 1/2 c. shredded raw potato (1 med.)
- 1 1/2 c. minced dates
- 1 c. minced walnuts
Method
- Heat oven to 350 degrees.
- In large mixer bowl combine brown sugar, flour, salt, baking soda, cinnamon, nutmeg, butter and Large eggs.
- Beat at medium speed, scraping bowl often, till well blended (2 to 3 min).
- Stir in potatoes, dates and nuts (mix may look slightly curdled).
- Pour mix into greased 2 qt round casserole; cover.
- Bake for 60 to 70 min or possibly till wooden pick inserted 2" from edge comes out clean.
- Let stand 30 min, covered before serving.
- If you like, unmold onto serving plate.
- Serve hot with Egg Nog Hard Sauce.
- Yield: 12 servings.
