Ingredients

  • 10 to 12 medium sized red potatoes, boiled in jackets
  • 1 lb. Velveeta cheese, cubed
  • 1 small chopped onion
  • 1 medium jar pimentos
  • 1 box seasoned croutons
  • 2 Tbsp. parsley flakes
  • 1 tsp. paprika
  • 1 tsp. garlic salt
  • 2 sticks margarine, melted

Method

  • After boiling potatoes, cut into cubes.
  • Do not peel.
  • Place cubed potatoes in a large greased casserole dish.
  • Sprinkle cubed cheese over potatoes.
  • Follow with onion, pimentos, parsley flakes, paprika and garlic salt.
  • Place croutons on top of casserole.
  • Melt margarine and pour over top.
  • Bake 30 to 45 minutes in a 350° oven. Makes 10 to 12 large servings.
