Ingredients

  • 1/2 onion a medium
  • 2 cans chicken
  • 1/2 sour cream large tub
  • 1/2 can green chilis
  • 10 corn tortillas oh my goodness, CostCo carries corn tortillas in the
  • oil
  • tortillas

Method

  • Saute the chopped onion with some butter and a bit of oil, add both cans of chicken, shred, and cook till colored
  • I added some seasoned salt to add some taste, but you won't need much
  • Take out chicken, add more oil to fry the tortillas
  • Put one tortilla in at a time, fry on both sides for about 1 minute, lay on a paper towel, put another one in the oil.
  • Fill the tortilla with the chicken, however much you would like, and roll the enchilada closed. Repeat with remaining chicken and tortillas.
  • Stir together the sour cream and chilis and put on top of the enchiladas
  • Degrees in the oven till warmed through, top with cheese, melt, and serve!
