Ingredients

  • 1 1/2 c. sifted flour
  • 1 tsp. soda
  • 1 tsp. salt
  • 1/2 c. butter
  • 1 c. sugar
  • 1 unbeaten egg
  • 1 c. (8 3/4 oz. can) undrained crushed pineapple
  • 1 tsp. vanilla
  • 1/2 c. coconut
  • 1/2 c. firmly packed brown sugar

Method

  • Sift together flour, soda and salt.
  • Cream butter.
  • Gradually add sugar, creaming well.
  • Add egg, crushed pineapple and vanilla. Mix well.
  • Stir in sifted dry ingredients.
  • Turn into 9-inch square pan, greased and floured on bottom.
  • Combine coconut and packed brown sugar and sprinkle over batter.
  • Bake at 350°
  • for 35 to 40 minutes.
