Ingredients

  • 1 chicken, cooked, deboned and cut into bite size pieces
  • 1 large onion, chopped
  • 1 can cream of mushroom soup
  • 1 can enchilada sauce (mild or hot)
  • 1 c. grated Cheddar cheese
  • 2 c. chicken broth
  • 1 large pkg. Fritos

Method

  • Mix onion, soup and sauce in pan and heat until bubbly.
  • Line casserole with Fritos and add a layer of chicken and a layer of cheese.
  • Alternate the chicken and the cheese and Fritos again. Pour hot soup mix over the layers.
  • Top with crushed Fritos and cheese; bake in 350° oven until cheese is bubbly.
