Ingredients
- 1 chicken, cooked, deboned and cut into bite size pieces
- 1 large onion, chopped
- 1 can cream of mushroom soup
- 1 can enchilada sauce (mild or hot)
- 1 c. grated Cheddar cheese
- 2 c. chicken broth
- 1 large pkg. Fritos
Method
- Mix onion, soup and sauce in pan and heat until bubbly.
- Line casserole with Fritos and add a layer of chicken and a layer of cheese.
- Alternate the chicken and the cheese and Fritos again. Pour hot soup mix over the layers.
- Top with crushed Fritos and cheese; bake in 350° oven until cheese is bubbly.
