Ingredients
- 1 lb. string beans
- 4 potatoes
- 1 Tbsp. tarragon vinegar
- 1 tsp. butter
- 1 tsp. flour
- salt and pepper
Method
- Bring to boil 2 cups salted water.
- Prepare the string beans, cut in half inch lengths.
- Boil them, uncovered, in the water, adding the butter.
- Peel and dice the potatoes, and add them to the beans after the beans have boiled 15 minutes.
- Boil for 15 more minutes; then sift in the flour, sprinkle with pepper and add the vinegar.
