Ingredients
- 8 to 10 fresh tomatoes
- 1/2 small green bell pepper
- 1 (2 inch) slice hot pepper
- 1 tsp. thyme
- 1/2 medium yellow onion
- 4 Tbsp. sugar
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 tsp. lemon juice
Method
- Scald, peel and chop tomatoes.
- Chop green bell pepper, hot pepper and onion.
- Add to tomatoes.
- Put in 2-quart saucepan. Cook until pepper and onion are tender.
- Add sugar, thyme, salt and pepper and lemon juice.
- Cook about 10 minutes more.
- Makes about 1 quart.
