Ingredients

  • 1 lb. ziti or other pasta
  • 2 lb. zucchini
  • 5 fluid oz. olive oil
  • salt and freshly ground black pepper
  • 1/2 c. grated Parmesan cheese
  • 8 oz. Mozzarella cheese, cut in cubes
  • 2 eggs, beaten

Method

  • Cut zucchini into thin rounds and fry lightly in oil.
  • Do not overcook.
  • Put aside and keep warm.
  • Cook pasta according to directions. Drain pasta and return to pan.
  • Add Mozzarella cheese and stir quickly so that the hot pasta starts to melt the cheese. Now add the eggs and zucchini, stirring quickly to set the eggs. Add Parmesan cheese and pepper to taste. Stir thoroughly and serve at once.
