Ingredients

  • 1/2 c. brown sugar, packed
  • 1/4 c. margarine
  • 1 egg
  • 3/4 c. Dole pineapple juice
  • 1 tsp. grated orange peel
  • 1 1/2 c. all-purpose flour
  • 1/2 c. whole wheat flour
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1/4 tsp. ground cinnamon
  • 1 c. Dole raisins

Method

  • Beat sugar and margarine until light and fluffy.
  • Beat in egg, juice and orange peel.
  • Combine remaining ingredients.
  • Stir into juice mixture until moistened.
  • Spoon batter in 6 muffin cups, coated with cooking spray.
  • Bake at 375° for 25 minutes.
  • Cool on rack and serve warm.
  • Makes 6 large muffins.
