Ingredients

  • 2 c. uncooked rice
  • 4 c. chicken broth
  • 1 bay leaf
  • 1 c. chopped onions
  • 4 pieces bacon, crumbled (save drippings)
  • 1/4 lb. chicken livers, chopped
  • 1/4 c. chopped green pepper
  • 2 tsp. garlic, minced
  • butter

Method

  • Preheat oven to 250°.
  • Place rice in saucepan and add broth and bay leaf.
  • Cover.
  • Bring to a boil and simmer 15 minutes. Cook bacon.
  • Cook onions and pepper in bacon drippings until almost brown (add oil if needed).
  • Add livers; cook until brown. Add garlic and dash of salt and pepper.
