Ingredients
- 2 c. uncooked rice
- 4 c. chicken broth
- 1 bay leaf
- 1 c. chopped onions
- 4 pieces bacon, crumbled (save drippings)
- 1/4 lb. chicken livers, chopped
- 1/4 c. chopped green pepper
- 2 tsp. garlic, minced
- butter
Method
- Preheat oven to 250°.
- Place rice in saucepan and add broth and bay leaf.
- Cover.
- Bring to a boil and simmer 15 minutes. Cook bacon.
- Cook onions and pepper in bacon drippings until almost brown (add oil if needed).
- Add livers; cook until brown. Add garlic and dash of salt and pepper.
