Ingredients

  • 2 eggs
  • 1 c. sugar
  • 1/4 tsp. salt
  • 1 1/2 c. dates
  • 2 1/4 c. Rice Krispies
  • 1/2 c. chopped walnuts
  • 1 tsp. vanilla
  • 2 c. coconut

Method

  • Beat eggs with sugar and salt until thick.
  • Add dates.
  • Turn mixture into heavy saucepan and cook over low heat, about 10 minutes.
  • Remove from heat and add cereal, chopped nuts and vanilla.
  • When mixture is cool enough to handle, pinch off small portions and form into ball.
  • Then roll each ball in the coconut as you form them.
  • Cool; store in cool dry covered container.
