Ingredients
- 2 eggs
- 1 c. sugar
- 1/4 tsp. salt
- 1 1/2 c. dates
- 2 1/4 c. Rice Krispies
- 1/2 c. chopped walnuts
- 1 tsp. vanilla
- 2 c. coconut
Method
- Beat eggs with sugar and salt until thick.
- Add dates.
- Turn mixture into heavy saucepan and cook over low heat, about 10 minutes.
- Remove from heat and add cereal, chopped nuts and vanilla.
- When mixture is cool enough to handle, pinch off small portions and form into ball.
- Then roll each ball in the coconut as you form them.
- Cool; store in cool dry covered container.
