Ingredients
- 2 1/2 c. self-rising flour
- 1 small can crushed pineapple (save juice)
- 1 1/2 c. oil (Wesson or Crisco)
- 2 Tbsp. hot water
- 1/2 pkg. shredded coconut
- 2 c. sugar
- 4 egg yolks (save whites)
- 1 c. nuts, chopped (pecans or walnuts)
Method
- Mix all together; beat well.
- Pour into well-greased and floured tube pan.
- Bake 1 hour and 10 minutes at 325°.
- Mix pineapple juice (or orange juice) with 1/2 box of 10x confectioners sugar.
- Pour over hot cake in pan.
