Ingredients

  • 2 1/2 c. self-rising flour
  • 1 small can crushed pineapple (save juice)
  • 1 1/2 c. oil (Wesson or Crisco)
  • 2 Tbsp. hot water
  • 1/2 pkg. shredded coconut
  • 2 c. sugar
  • 4 egg yolks (save whites)
  • 1 c. nuts, chopped (pecans or walnuts)

Method

  • Mix all together; beat well.
  • Pour into well-greased and floured tube pan.
  • Bake 1 hour and 10 minutes at 325°.
  • Mix pineapple juice (or orange juice) with 1/2 box of 10x confectioners sugar.
  • Pour over hot cake in pan.
