- 1 lb. pitted dates
- 3/4 c. white raisins
- 2 c. water
- 1 stick oleo
- 4 eggs
- 1 tsp. salt
- 1 Tbsp. vanilla
- 1/2 c. sugar
- 1/2 c. brown sugar
- 1 c. plain yogurt
- 2 scant tsp. soda
- 4 level tsp. baking powder
- 2 tsp. cinnamon
- 1/4 tsp. cloves
- 1/4 tsp. nutmeg
- 3 c. flour
Method
- Place dates, raisins and water in pan to boil slowly 15 minutes covered.
- Set aside for cooling or even overnight.
- Cream sugars and oleo; add eggs.
- Beat well, then add all ingredients and flour.
- Stir well.
- Add 1 cup chopped nuts, if desired.
- Make 4 small to medium loaves or 3 large loaves.
- Bake at 325° for 25 minutes, then at 300°.
- Total Baking Time:
- 45 to 55 minutes. Test for doneness with a toothpick.
- Do not overbake.
