Ingredients
- 1 large buttercup/butternut squash
- 1 large head cauliflower
- 2 red onions
- 3 T olive oil
- 3 T other vegetable oil
- 1 T balsamic vinegar
- 2-4 T chopped fresh sage
- salt
- pepper
Method
- Clean and chop winter squash and red onion to total 4 quarts
- mix in oil vinegar, sage, salt, and pepper
- spread in single layer on shallow baking sheets
- roast @ 425 F for 10 min
- stir
- roast another 10-15 min
