Ingredients

  • 1tbs olive oil
  • 1 clove garlic
  • 1 small onion, diced
  • 1 carrot, cut into half moons
  • 1 celery, diced
  • 1 sweet potato
  • 1 bay leaf
  • 1 tbs tomato paste
  • 3-4 cups liquid (water or stock)
  • 1/4 tsp cumin
  • 1/2 cup frozen peas
  • 1/4 tsp garam masala
  • 1 tbs peanut butter
  • 1 tsp fresh basiil
  • salt and pepper to taste

Method

  • In a soup pot on med heat, sweat onions, celery, garlic and carrots in olive oil.
  • add liquid, tom paste, sweet potatoes, bay leaf and cumin.
  • simmer for 20 min, or until veg is tender.
  • add peanut butter, garam masala.
  • using a blender or masher, puree a potion of the soup to thicken it up.
  • add basil and peas. return to heat bring to a simmer.
  • season with salt and pepper
