Ingredients

  • 1 tablespoon canola oil
  • 1/4 cup onions finely chopped
  • 1 clove garlic minced, or to taste
  • 1 teaspoon ginger root finely grated
  • 1/2 teaspoon curry powder or to taste
  • 1 pinch salt and black pepper or to taste
  • 1 pinch cumin ground, or to taste
  • 2 tablespoons scallions, spring or green onions finely chopped, only green part
  • 1/2 cup yogurt, plain
  • 2 teaspoons lemon juice or to taste
  • 2 tablespoons mint leaves freshly chopped

Method

  • In a small saucepan, heat up the oil over medium low heat, stir in onion and cook until dark golden, 3 to 5 minutes.
  • Stir in garlic, ginger, curry powder, salt, pepper and cumin.
  • Cook and stir for 40 seconds.
  • Remove from heat, stir in green onions.
  • Let cool for a minute.
  • Stir in yogurt, lemon juice, then chopped mint.
  • Refrigerate before serving.
