Ingredients

  • vegetable oil (for frying)
  • 12 cup milk
  • 14 cup flour
  • 14 cup grated parmesan cheese
  • 1 teaspoon paprika
  • 12 teaspoon oregano
  • 14 teaspoon dry mustard
  • 2 12 lbs chicken breasts, boneless skinless and cut in 1 inch pieces

Method

  • In a large frying pan, heat one inch of oil to 350.
  • Meanwhile put milk in a bowl.
  • In a paper bag, mix together flour, parmesan cheese, paprika, oregano and mustard.
  • First dip chicken pieces in milk, then place about a dozen pieces of chicken at a time in the bag and shake to coat.
  • Fry chicken in hot oil in batches without crowding, turning occasionally, for about 5 minutes, until crisp and golden brown.
  • Drain on paper towels.
