Ingredients
- vegetable oil (for frying)
- 12 cup milk
- 14 cup flour
- 14 cup grated parmesan cheese
- 1 teaspoon paprika
- 12 teaspoon oregano
- 14 teaspoon dry mustard
- 2 12 lbs chicken breasts, boneless skinless and cut in 1 inch pieces
Method
- In a large frying pan, heat one inch of oil to 350.
- Meanwhile put milk in a bowl.
- In a paper bag, mix together flour, parmesan cheese, paprika, oregano and mustard.
- First dip chicken pieces in milk, then place about a dozen pieces of chicken at a time in the bag and shake to coat.
- Fry chicken in hot oil in batches without crowding, turning occasionally, for about 5 minutes, until crisp and golden brown.
- Drain on paper towels.
