Ingredients

  • 1 1/2 lb. raw, whole, cleaned shrimp
  • 1 c. diced ham
  • 2 Tbsp. butter
  • 1/2 c. chopped onion
  • 1/4 c. green pepper
  • 2 cloves garlic
  • 1/4 c. chopped celery
  • 2 c. canned tomatoes, chopped and drained (reserve liquid)
  • 1 c. raw rice
  • 3 bay leaves
  • 1 c. water (including tomato liquid)
  • salt
  • pepper (cayenne)

Method

  • Saute onion, green pepper, celery and garlic in melted butter. Add shrimp and ham.
  • Fry about 5 minutes.
  • Stir in tomatoes and cook 10 minutes.
  • Stir in rice.
  • Add seasoning and liquid.
  • Bring to boil.
  • Cover; simmer until rice is done, about 30 minutes. Serves 4.
  • Use soy sauce if you like.
