Ingredients

  • 1 1/2 lb. ground beef
  • 3/4 c. shredded American or Cheddar cheese
  • 5 eggs, slightly beaten
  • 1/2 c. diced tomato
  • 1/2 c. chopped onion
  • pepper to taste

Method

  • Brown ground beef in skillet with the onions; add tomatoes and continue to simmer or cook on low heat.
  • Sprinkle cheese over mixture.
  • Continue to cook on low until slightly melted.
  • Pour beaten eggs over mixture and simmer until done.
  • Serve with a salad and dinner roll.
  • Season as you cook to your own taste.
