Ingredients
- 1 1/2 lb. ground beef
- 3/4 c. shredded American or Cheddar cheese
- 5 eggs, slightly beaten
- 1/2 c. diced tomato
- 1/2 c. chopped onion
- pepper to taste
Method
- Brown ground beef in skillet with the onions; add tomatoes and continue to simmer or cook on low heat.
- Sprinkle cheese over mixture.
- Continue to cook on low until slightly melted.
- Pour beaten eggs over mixture and simmer until done.
- Serve with a salad and dinner roll.
- Season as you cook to your own taste.
