Ingredients

  • 1 1/2 qt. water or chicken broth (6 c.)
  • 10 oz. pkg. frozen chopped broccoli
  • 3/4 c. finely chopped onion
  • 1 tsp. monosodium glutamate
  • 1 tsp. white pepper
  • 1 tsp. garlic powder
  • 8 oz. American cheese, shredded (2 c.)
  • 1 c. milk
  • 1 c. cream (half and half)
  • 1/4 c. butter
  • 1/3 c. flour
  • 1/2 c. cold water

Method

  • In a 3-quart saucepan, bring water or broth to a boil.
  • Add broccoli and onion.
  • Boil 10 to 15 minutes.
  • Add seasonings and cheese.
  • Stir until cheese melts.
  • Add milk, cream and butter. Stir and heat to boiling.
  • Slowly add cold water to flour, stirring until mixture is smooth.
  • Slowly add to soup mixture, stirring rapidly.
  • Cook and stir until soup is thickened.
  • Makes 8 to 10 servings.
