Ingredients

  • 8 large eggs
  • 1 green pepper
  • 1 red pepper
  • 1 medium tomato
  • 3 small green onions
  • 1/2 lb. country sausage (optional)
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 tsp. parsley
  • 1/2 tsp. garlic

Method

  • In medium frying pan, cook sausage until done, drain and set aside.
  • While cooking sausage, chop peppers and onions and dice tomatoes, set aside in bowl.
  • Beat eggs, salt, pepper, parsley and garlic and pour into preheated nonstick frying pan on medium-low heat.
  • Cook, stirring constantly.
  • Add cooked sausage and chopped vegetables and cook until eggs are done the way you like.
  • Garnish with grapes and or strawberries and serve with whole grain toast. Serves 6.
