Ingredients
- 1 lb. ground abalone
- 1 c. chopped onion
- 1 c. chopped celery
- 1 c. diced potatoes
- 1 qt. hot milk
- 1 c. clam juice
- 1 tsp. m.s.g. (optional)
- 2 Tbsp. flour
- 1/4 c. butter
- salt and pepper
- dash of Worcestershire sauce
- dash of Tabasco
Method
- Boil potatoes in clam juice.
- Saute onions and celery in butter until golden brown.
- Add abalone and continue to cook. Gradually add flour, stirring constantly, until smooth, then add 1 plus quart milk slowly and continue to stir until well blended. Season to taste with m.s.g., salt, pepper, Worcestershire, Tabasco and clam juice.
