Ingredients

  • 1 lb. ground abalone
  • 1 c. chopped onion
  • 1 c. chopped celery
  • 1 c. diced potatoes
  • 1 qt. hot milk
  • 1 c. clam juice
  • 1 tsp. m.s.g. (optional)
  • 2 Tbsp. flour
  • 1/4 c. butter
  • salt and pepper
  • dash of Worcestershire sauce
  • dash of Tabasco

Method

  • Boil potatoes in clam juice.
  • Saute onions and celery in butter until golden brown.
  • Add abalone and continue to cook. Gradually add flour, stirring constantly, until smooth, then add 1 plus quart milk slowly and continue to stir until well blended. Season to taste with m.s.g., salt, pepper, Worcestershire, Tabasco and clam juice.
