Ingredients

  • 3 1/2 c. all-purpose flour
  • 1 2/3 c. sugar
  • 2 tsp. each: baking soda and pumpkin pie spice
  • 3/4 tsp. salt
  • 1 tsp. baking powder
  • 1 (16 oz.) can whole berry cranberry sauce
  • 1 (16 oz.) can pumpkin
  • 3/4 c. chopped pecans
  • 2/3 c. vegetable oil
  • 4 eggs

Method

  • Mix together in a large bowl all dry ingredients.
  • Combine remaining ingredients and stir into dry mixture only until moistened.
  • Pour into two 9 x 5-inch loaf pans that have been greased.
  • Bake at 350° for 65 minutes or until bread tests done with wooden pick.
  • Cool in pan 10 minutes, then remove to cooling rack.
