Ingredients
- 3 or 4 lb. roast
- 6 c. dry pinto beans
- 1 c. chopped onion
- 4 Tbsp. chili powder
- 2 Tbsp. cumin
- 3 Tbsp. oregano
- 1/2 tsp. garlic
- 1/4 oz. can green chilies
- 14 c. water
Method
- Boil roast in water.
- Cool and take fat off roast.
- Cut into small pieces.
- Add roast and dry beans to broth.
- Add other ingredients and cook until tender.
- Add more water as needed. Serve over corn chips.
- Top with lettuce, tomatoes, cheese and taco sauce.
