Ingredients
- 2 c. all-purpose flour
- 1 c. sugar
- 1 1/2 tsp. baking powder
- 1 tsp. salt
- 1/2 tsp. baking soda
- 3/4 c. orange juice
- 2 Tbsp. grated orange peel
- 2 Tbsp. shortening
- 1 well beaten egg
- 1 1/2 c. fresh or frozen cranberries, chopped
- 1/2 c. chopped nuts
Method
- Preheat oven to 350°.
- Mix flour, sugar, baking powder, salt and baking soda.
- Stir in orange juice, orange peel, shortening and egg.
- Mix until blended.
- Stir in cranberries and nuts.
- Turn into a greased 9 x 5-inch loaf pan.
- Bake for 55 minutes or until toothpick inserted in center comes out clean.
- Cool on rack for 15 minutes; remove from pan.
- Makes one loaf.
