Ingredients

  • 2 c. all-purpose flour
  • 1 c. sugar
  • 1 1/2 tsp. baking powder
  • 1 tsp. salt
  • 1/2 tsp. baking soda
  • 3/4 c. orange juice
  • 2 Tbsp. grated orange peel
  • 2 Tbsp. shortening
  • 1 well beaten egg
  • 1 1/2 c. fresh or frozen cranberries, chopped
  • 1/2 c. chopped nuts

Method

  • Preheat oven to 350°.
  • Mix flour, sugar, baking powder, salt and baking soda.
  • Stir in orange juice, orange peel, shortening and egg.
  • Mix until blended.
  • Stir in cranberries and nuts.
  • Turn into a greased 9 x 5-inch loaf pan.
  • Bake for 55 minutes or until toothpick inserted in center comes out clean.
  • Cool on rack for 15 minutes; remove from pan.
  • Makes one loaf.
