Ingredients

  • 4 Tbsp. butter
  • 4 Tbsp. flour
  • 2 c. milk
  • 1 tsp. Worcestershire sauce
  • 1 Tbsp. celery, chopped
  • 1 Tbsp. onion, chopped
  • 1 egg plus 1 yolk
  • 2 Tbsp. sherry
  • 1/4 c. bread crumbs
  • 1 Tbsp. parsley
  • 1 lb. crabmeat

Method

  • Melt butter; stir in flour.
  • Slowly stir in milk, then add next 3 ingredients. Add egg and yolk.
  • Cook 2 minutes more.
  • Add sherry and bread crumbs, parsley and crabmeat.
  • Mix all with 1/2 cup mayonnaise.
  • Place in casserole dish and bake at 350° for 1 hour. Spread some mayonnaise on top to keep soft.
  • Use in chafing dish with crackers as an hors d'oeuvre or as a main dish.
