Ingredients
- 4 Tbsp. butter
- 4 Tbsp. flour
- 2 c. milk
- 1 tsp. Worcestershire sauce
- 1 Tbsp. celery, chopped
- 1 Tbsp. onion, chopped
- 1 egg plus 1 yolk
- 2 Tbsp. sherry
- 1/4 c. bread crumbs
- 1 Tbsp. parsley
- 1 lb. crabmeat
Method
- Melt butter; stir in flour.
- Slowly stir in milk, then add next 3 ingredients. Add egg and yolk.
- Cook 2 minutes more.
- Add sherry and bread crumbs, parsley and crabmeat.
- Mix all with 1/2 cup mayonnaise.
- Place in casserole dish and bake at 350° for 1 hour. Spread some mayonnaise on top to keep soft.
- Use in chafing dish with crackers as an hors d'oeuvre or as a main dish.
