Ingredients
- 1 (8 3/4 oz.) can creamed corn
- 1/2 c. milk (possibly more)
- 1 1/2 c. flour
- 3 tsp. baking powder
- 3/4 tsp. salt
- 1 egg, beaten
Method
- Sift together dry ingredients in large bowl.
- In small bowl, combine egg, milk and corn.
- Add to dry ingredients.
- Mix until moistened.
- Do not overmix.
- Add flour or milk as needed to make batter stiff enough to drop into hot oil.
- Drop batter from tablespoon into deep fryer (375°).
- Fry until golden brown, about 3 to 4 minutes.
- Drain on paper towels.
- Sprinkle generously with powdered sugar.
