Ingredients

  • 1 (8 3/4 oz.) can creamed corn
  • 1/2 c. milk (possibly more)
  • 1 1/2 c. flour
  • 3 tsp. baking powder
  • 3/4 tsp. salt
  • 1 egg, beaten

Method

  • Sift together dry ingredients in large bowl.
  • In small bowl, combine egg, milk and corn.
  • Add to dry ingredients.
  • Mix until moistened.
  • Do not overmix.
  • Add flour or milk as needed to make batter stiff enough to drop into hot oil.
  • Drop batter from tablespoon into deep fryer (375°).
  • Fry until golden brown, about 3 to 4 minutes.
  • Drain on paper towels.
  • Sprinkle generously with powdered sugar.
