Ingredients
- 3 c. mashed potatoes
- 4 eggs, separated
- 1 c. shredded cheese (sharp Cheddar)
- 1 Tbsp. chopped onion
- 1/2 small green pepper, diced
- 1/2 tsp. celery salt
Method
- Prepare the mashed potatoes.
- Beat egg yolks into the potatoes.
- Add the cheese, onion, green pepper and celery salt. Whip egg whites into peaks and fold into potatoes.
- Spoon into buttered casserole dish, 1/2-quart size.
- Bake at 375° for 25 minutes.
- Makes 4 servings.
