Ingredients
- 1 can whole kernel corn (juice and all)
- 1 can cream-style corn
- 1 box corn meal muffin mix
- 2 eggs, well beaten
- 1 c. sour cream
- 1 c. grated sharp cheese
- 1 stick margarine
- 1 large onion, chopped
- 1 large green pepper, chopped
Method
- Saute margarine, onion and green pepper until soft.
- Set aside. In a large bowl, mix well the corn, muffin mix and eggs.
- Pour into a 9 x 13-inch pan.
- Spread the sauteed mix over top of corn mix. Spoon sour cream in chunks on top of onion sauteed mix.
- Just before baking, spread top with grated sharp cheese.
- Bake at 400° for 30 minutes.
