Ingredients

  • 1 can whole kernel corn (juice and all)
  • 1 can cream-style corn
  • 1 box corn meal muffin mix
  • 2 eggs, well beaten
  • 1 c. sour cream
  • 1 c. grated sharp cheese
  • 1 stick margarine
  • 1 large onion, chopped
  • 1 large green pepper, chopped

Method

  • Saute margarine, onion and green pepper until soft.
  • Set aside. In a large bowl, mix well the corn, muffin mix and eggs.
  • Pour into a 9 x 13-inch pan.
  • Spread the sauteed mix over top of corn mix. Spoon sour cream in chunks on top of onion sauteed mix.
  • Just before baking, spread top with grated sharp cheese.
  • Bake at 400° for 30 minutes.
