Ingredients

  • 3 eggs separated
  • salt
  • 1 cup sugar
  • 1 cup ricotta cheese
  • 4 ounces coffee strong espresso
  • 1 teaspoon vanilla extract
  • 2 cups flour
  • 1 teaspoon baking powder
  • 5/8 cup chocolate chips
  • powdered sugar

Method

  • Preheat the oven to 180 degrees Celsius.
  • In a bowl, whisk the egg whites with a pinch of salt until stiff. Set aside.
  • In another bowl, beat the egg yolks with the sugar until light and frothy.
  • Add the cheese, coffee, and vanilla and continue to beat the mixture.
  • Add the flour and baking powder and mix well.
  • Add the chocolate chips and gently fold in the egg white.
  • Grease and flour and ringed cake pan, and pour in the mixture.
  • Bake for 45 minutes.
  • Allow to cool and remove from pan. Sprinkle with powdered sugar.
