- 2 1/2 c. flour
- 1/2 c. unsweetened cocoa
- 2 1/2 tsp. baking powder
- 1 1/2 tsp. baking soda
- 1 tsp. salt
- 3/4 c. butter, softened
- 2 c. sugar
- 2 tsp. cinnamon
- 3/4 tsp. nutmeg
- 3 eggs
- 2 c. zucchini, grated
- 2 tsp. vanilla extract
- 1/2 c. milk
Method
- Mix flour, cocoa, baking powder, baking soda and salt together.
- Cream until fluffy the butter, sugar, eggs, cinnamon, and nutmeg.
- Stir into cremed mixture the zucchini, vanilla, milk and the flour mixture.
- Pour into two 9 inch floured pans and bake at 350 degrees for 30 minutes.
- Let stand five minutes and put on racks to cool.
- When cool, ice with Cinnamon Cream Cheese Frosting.
